Recognised as one of Asia’s 50 Best Bars 2021 and inspired by the Pacific Ocean and rich culture of Asia’s ports, MO BAR is a vibrant experience that celebrates the flavours and aromas of the region.
Blending the finest ingredients with progressive techniques, bespoke cocktails and beverages range from refreshing to spirituous, with each artfully presented by Mandarin Oriental’s talented team. The innovative cocktail menu can be paired with eclectic light bites, while the hotel’s popular afternoon tea is also served daily, featuring artisan pastries and a myriad of accompanying delights.
With breathtaking views of Marina Bay, by day or night, and a chic design, MO BAR is the hottest destination in Singapore. Since it was just the first day of Phase 3 when we could go back to dining at bars and restaurants, the bar was a little quiet. It was conveniently located on Level 4 of the Mandarin Oriental Hotel that we were staying in. Having heard so much about this bar and its beautiful cocktails, we decided to head down and check it out.
The drinks menu was interactive and has clear symbols on the alcohol content for each drink, ranging from non to high. The size of the vessel was also indicated from tall to short. Through their cocktail menu, it was like a journey of adventure and exploration through the sea and South East Asia. We are like the islands in the sea, separated on the surface but connected in the deep.
Sarimanok is this beautiful cocktail made with rum, mango and citrus. The story goes that after arriving at the Peal of the Orient, we were reunited with the mother of dragons. There was a story about a rooster in the first of the 7 heavens. Local rations were explored before we were directed north to trade. At first we thought that the surface of the cocktail was painstakingly created using some piping method. However, it is just a piece of edible rice paper that had a painting of a colourful bird. This drink is definitely the most Insta-worthy among all the others on the menu.
Moka is a drink made of rum, chocolate and banana. The journey brings us to the slopes of cocoa plantations built on the fertile volcanic slopes of Indonesia. Surprised by the unique flavours, the spices were traded with a local villager who gave his produce in return. It was served in a short glass but this drink had a high alcohol content – due to the rum – which I enjoyed. There is some cocoa butter plated on the side of the glass which you can smack your lips after you took a sip of the drink.
I love the vibes of MO Bar, and hope to be back again to enjoy more of their other drinks. The prices of the cocktails are a bit steep here, but this is standard for prices at 5-star hotels in Singapore. Moreover, you are also paying for the view of the Marina Bay area.
